A versatile smoothie, with flexible nut switching options. This nut and seed smoothie is low in fruit as it only contains half a banana and a low fruit smoothie can help to balance your blood sugar levels, it is full of good fats and superbly creamy.
There are 2 quantities of liquid – one for smoothies and one for a smoothie bowl.
Ingredients
5 walnuts
1 tbsp. of mixed seeds*
½ avocado
½ banana
2 heaped tbsp. coconut or almond yoghurt
2 heaped tbsp. of nutty nutty peanut butter super protein powder (from That Protein)*1
or
1 heaped tbsp. of peanut or nut butter
½ tsp. of vanilla extract
Smoothie 200ml plant-based milk – almond, cashew, coconut or a blended milk
Smoothie bowl 100ml
Optional ingredient additions
1 cm of fresh ginger
1 tbsp. cacao powder
Chocolate drizzle
20g 85% vegan dark chocolate (the darker the better it melts)
½ tsp. coconut oil
Method
We used a blender with a cup system for our walnut and seed smoothie. Add the walnuts and seeds to the blender cup and then cover them with the liquid, stir and left to soak for 30 mins to an hour (or overnight). Soaking is optional, it helps create a creamier smoothie and starts to active the nuts and seeds to aid digestion.
Then add the remaining ingredients to the blender cup. Screw on the lid and blend until smooth and creamy.
Pour into a glass and drink with a straw or spoon into a bowl and top with mixed chopped nuts, granola, coconut yoghurt, and if you are feeling that way inclined drizzle with dark melted chocolate.
To make the chocolate drizzle – we simply melt 20g of 85% dark vegan chocolate and ½ a tsp of coconut oil in the microwave and drizzle it over the top.
*The recipe asks for a tbsp of mixed seeds, you’ll notice we use this in a lot of our recipes, the mix is made up of pumpkin, sunflower, flax and sesame seeds – we always keep a large jar of this seed mix to hand. We eat a handful as a quick snack, add it to smoothies and top smoothie bowls, on or over porridge, mix it into granola and sprinkle it on salads, sometimes activated by lightly toasting in a dry frying pan and sometimes just as they are.
