We are lucky enough to have a small young orchard that provides us with a mix of crunchy eating and cooking apples. This means that from the end of September we are looking for tasty ways (other than stewing, crumbles and cakes) to enjoy them. The idea for this vegan sausage and apple traybake came from wanting to make the most of our windfall apples and from our increasing need to have everyday recipes that are straightforward to make, require minimal prep and ideally all go in one dish.

Which vegan sausages to use?
Vegan sausages have improved incredibly in the last 10 years. Does anyone else remember when you used to get a random vegetable-filled (usually peas, corn and carrot) rolled up in a badly mashed potato rolled thing?
In these images we’ve used a frozen Linda Macartney sausage – these aren’t gluten-free.
Wheat-free vegan sausages come from Heck or Waitrose plant life range (they don’t claim to be gluten-free but are wheat-free – always check ingredients). Do let us know if you find a good vegan sausage – just thinking that we really should do a taste testing blog post on this.
Feel free to vary the ingredients to suit your cupboards and the seasons.
Although the vegan sausage & apple traybake has an autumnal feel, we’d thoroughly recommend switching the broccoli for asparagus spears and including new potatoes.
If you don’t have a tin of butter beans we also use cannellini or mixed beans, these work brilliantly in this recipe.
Also switching the red onion for white onions or shallots will subtly change the flavours of the dish.
Can I use dry herbs?
Yes, if you don’t have fresh herbs do use a good heaped teaspoon of dry herbs and if you don’t have fresh sage then rosemary adds a delicious flavour to the vegan sausage & apple traybake.

Ingredients

12 vegan sausages (we’ve used ones that can be baked from frozen)
2 medium red onions, cut into wedges
3 apples, cut into wedges
2 tbsp olive oil
2 tbsp plain flour
250ml vegetable stock
1x 400g tin butter beans and the liquid
200g Tender stem broccoli
12 fresh sage leaves, finely chopped
Pinch salt
Few twists of black pepper
Instructions
Preheat the oven to 220°C/ 200°C Fan. Add the sausages, apple and red onion wedges to a large roasting tray (we used one 41 cm x 30 cm). Drizzle with olive oil and place on the medium shelf of the oven for 15 minutes.
Remove the tray from the oven, sprinkle over the flour, stir through everything and return to the oven for 5 minutes. Then add the vegetable stock, butter beans and the liquid, broccoli and the sage leaves. Mix and season.
Return the roasting tray to the oven and bake for a further 25 minutes (turn the broccoli halfway through and give all the ingredients a careful stir). Serve immediately.
