Our vegan french toast is the perfect brunch for lazy mornings, a delicious vegan twist on a French classic. Infused with vanilla, cinnamon and topped with nut butter and blueberries.

Prep time – 4 minutes
Cook time – 5-8 minutes

Serves 2-3


200ml almond milk
1 tsp. vanilla extract
1 tbsp. maple syrup
1 tsp. ground cinnamon
2 tbsp. gram (chickpea) flour
1 tsp. rapeseed oil (per slice)
Thick/doorstop slices of bread of your choice – ideally a couple of days old

Nut butter
Chocolate spread
Sliced bananas
Maple syrup


To make the vegan french toast use a shallow bowl and whisk together the milk, vanilla extract, maple syrup and ground cinnamon. In a separate small bowl add the gram flour and 4-6 tablespoons of the milk mixture and whisk together until smooth. Then add the gram flour mixture back to the shallow bowl and whisk together.

Place the frying pan on a medium heat and add the oil.

Cut the bread into thick slices. Soak each slice one at a time on each side in the vegan french toast mixture, allow any excess liquid to drip back into the bowl. Fry for 2-3 minutes on each side until golden. Remove to a cooling rack and repeat for the remaining slices.

Serve the vegan french toast with your favourite nut butter, chocolate spread, sliced bananas, blueberries and maple syrup.
