Our Halloween chocolate biscuit recipe was created for Blue Diamond.
Makes 12 cookies
185g gluten-free plain flour
35g cacao powder
1½ tsp. baking powder
80g dairy free butter
80ml grade A maple syrup
50ml Blue Diamond Unsweetened Almond milk
2 tsp. vanilla extract
1 pack of edible googly eyes
Pre-heat the oven to 180℃.
Line a large baking sheet with baking paper.
Add the dry ingredients to a large mixing bowl then add the softened butter,
maple syrup, Blue Diamond Unsweetened Almond milk and vanilla extract. Stir
together until the mixture starts to bind. Use your hands to form the biscuit
dough into a ball.
Cover and chill the biscuit dough in the fridge for up to 30 minutes.
Tip the dough onto a floured surface and roll out until about ½ cm thick. Cut out
your chosen biscuit shapes and place the biscuits onto the lined baking tray.
Place in the oven on the middle shelf and bake for 6 minutes.
Remove the biscuits from the oven, then gently push the googly eyes into place
and transfer to a cooling rack.
Store in an airtight container and eat within 3 days.
