This Easter egg ice cream dessert is the perfect Easter indulgence and great to make with the children. A vegan chocolate Easter egg half-filled with delicious ice cream mixed with our homemade Tahini and Dark Chocolate Chip Cookies, drizzled in chocolate, and decorated with crumbled cookies, mini-Easter eggs, and fun Easter characters. A quick and easy Easter dessert!
One of the kids had seen the TikTok craze of cheesecake in an Easter egg but isn’t a fan of cheesecake, so asked for an alternative -and this dessert is inspired by them.
There is so much more choice now of vegan chocolate Easter eggs. Most supermarkets have a section with a few options of large and small eggs of varying prices. There are milk, dark and white chocolate eggs available, made from nuts and plant-based milks and other vegan ingredients. Look for Nomo, Hotel Chocolat, Montezuma, Buttermilk, H!P, Doisy and Dam as well as own-brand eggs.
Which vegan ice cream to use
There are lots of different varieties of vegan ice cream available that are super creamy and delicious. Made from oats, coconut, almond or soya milk – so find your favourite and add this to the Easter egg ice cream dessert. We’ve used the Oatly Salted Caramel in this recipe.
Some of the brands to look out for are Oatly, Booja Booja, Swedish Glace, Jude’s, The Coconut Collaborative, Ben & Jerry’s, Alpro, Roar and many others.
Cost to make Easter egg ice cream dessert
We’ve calculated the cost of the ingredients we’ve used to make this dessert (including Healthy Twists cookies) – depending on the ingredients you use this price may vary slightly.
Carefully split the chocolate easter egg in half using a sharp knife (get an adult to help you if needed). If the egg doesn’t split easily, warm the knife in hot water and carefully ease it along the seam of the egg until it cracks in half.
Scoop the ice cream into a small bowl and break it up with a spoon until it softens a little. Then break a cookie into chunks and fold them into the ice-cream.
Spoon the ice-cream and cookie mix evenly between the chocolate egg halves.
Drizzle over the melted chocolate and crumble over the second cookie.
Then squeeze in a chocolate character and the mini eggs.
Eat, straight away for slightly softer ice-cream or return to the freezer for 30 minutes or until you care ready to eat them.
