Which cookies to use?

We’ve used our Tahini and Dark Chocolate Chip Cookies in this Easter egg ice cream dessert which works so well with the Oatly Salted Caramel ice cream. But any of our Healthy Twists cookie recipes would be delicious too – try the Easy Vegan Peanut Butter & Chocolate Chip Cookies or the Miso and White Chocolate Chip Cookies.

Vegan chocolate Easter eggs

There is so much more choice now of vegan chocolate Easter eggs. Most supermarkets have a section with a few options of large and small eggs of varying prices. There are milk, dark and white chocolate eggs available, made from nuts and plant-based milks and other vegan ingredients. Look for Nomo, Hotel Chocolat, Montezuma, Buttermilk, H!P, Doisy and Dam as well as own-brand eggs.

Description

A fun Chocolate Easter Egg Ice Cream Dessert, the kids will love this mix of ice cream and cookie chunks, it is delicious and very quick to make.

Ingredients

Scale

1 small 120g hollow vegan chocolate easter egg

250ml of vegan ice cream – your choice of flavour

2 cookies – we used our Tahini and Dark Chocolate Chip Cookies

25g of dark 70%+ chocolate melted

4 vegan mini eggs

2 mini vegan chocolate characters

Instructions

Remove the vegan ice-cream from the freezer.

Carefully split the chocolate easter egg in half using a sharp knife (get an adult to help you if needed).  If the egg doesn’t split easily, warm the knife in hot water and carefully ease it along the seam of the egg until it cracks in half.

Scoop the ice cream into a small bowl and break it up with a spoon until it softens a little. Then break a cookie into chunks and fold them into the ice-cream.

Spoon the ice-cream and cookie mix evenly between the chocolate egg halves.

Drizzle over the melted chocolate and crumble over the second cookie.

Then squeeze in a chocolate character and the mini eggs.

Eat, straight away for slightly softer ice-cream or return to the freezer for 30 minutes or until you care ready to eat them.

Notes

To split the chocolate easter egg in half use a sharp knife (get an adult to help you if needed).  If the egg doesn’t split easily, warm the knife in hot water and carefully ease it along the seam of the egg until it cracks in half.
