Breakfast Bites

You may have noticed that we love breakfast! We probably love breakfast a little too much and the thought of missing breakfast is not something we can contemplate. For those occasions, we have a variety of homemade bliss/ energy/ bites/balls (we’ll go with bites) squirrelled away in batches either in the fridge or freezer ready to be lifted out. However, sometimes they can feel too sweet or not breakfast-ie enough, so we thought let’s put our favourite cereal into handy breakfast bites.
Breakfast Bites
Ingredients
150g dates pitted
150g prunes
60g walnuts
50g coconut flakes
40g pumpkin seeds
35g sunflower seeds
30g chia seeds
100g of your favourite granola
To make the breakfast bites add the dates and prunes to a food processor and blend until combined and smooth. Then tip in the walnuts, coconut chips, pumpkin, and sunflower seeds, chia seeds and blend/pulse until roughly combined. Then add the granola, pulse until broken up and sticks into the breakfast bites base mix.
Using your hands scoop a small palm full of the mix and roll into balls (we like at least 2 large bites from ours).
Place into a sealed container and store for up to 1 week. If it’s warm its preferable to keep them in the fridge.
